Delicious chicken roulades served with a creamy potato-lemon puree.

Ingredients

  • 4 chicken breasts
  • 150 grams cream cheese
  • 100 grams spinach
  • 1 onion
  • 2 cloves garlic
  • 500 grams potatoes
  • 1 lemon
  • 50 grams butter
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 180°C.
  2. Flatten chicken breasts and season with salt and pepper.
  3. In a bowl, mix cream cheese, spinach, chopped onion, and minced garlic.
  4. Spread the mixture onto each chicken breast and roll them up.
  5. Secure with toothpicks and place in a baking dish.
  6. Melt butter and drizzle over roulades.
  7. Bake for 25-30 minutes until cooked through.
  8. Meanwhile, boil potatoes until tender.
  9. Drain and mash with butter and lemon juice until creamy.
  10. Serve chicken roulades with potato-lemon puree.

Notes

  • For a richer flavor, let the roulades marinate for a few hours.
  • Feel free to add additional herbs such as thyme or rosemary for extra flavor.
