A delicious pasta dish combining the flavors of pumpkin and feta cheese.

Ingredients

  • 400g pasta
  • 300g pumpkin, diced
  • 200g feta cheese, crumbled
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • salt to taste
  • pepper to taste
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add diced pumpkin and thyme, season with salt and pepper, and cook until tender.
  4. Stir in the cooked pasta and crumbled feta cheese, mixing well.
  5. Top with grated parmesan cheese before serving.

Notes

  • For a creamier sauce, add a splash of cream or pasta water.
  • This dish works well with both whole wheat or gluten-free pasta.
