- 300g pumpkin, diced
- 200g feta cheese, crumbled
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp thyme
- salt to taste
- pepper to taste
- 1/4 cup parmesan cheese, grated
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add diced pumpkin and thyme, season with salt and pepper, and cook until tender.
- Stir in the cooked pasta and crumbled feta cheese, mixing well.
- Top with grated parmesan cheese before serving.

- For a creamier sauce, add a splash of cream or pasta water.
- This dish works well with both whole wheat or gluten-free pasta.
