A delicious and healthy zucchini sandwich that is perfect for lunch or a light dinner.

Ingredients

  • 2 medium zucchinis
  • 4 slices whole grain bread
  • 1/2 cup hummus
  • 1 cup spinach
  • 1 medium tomato, sliced
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Start by slicing the zucchinis into thin rounds.
  2. In a skillet, heat olive oil over medium heat and sauté the zucchini until tender.
  3. Spread hummus on each slice of bread.
  4. Layer spinach, sautéed zucchini, tomato slices, and feta cheese on top of the hummus.
  5. Season with salt and pepper as desired.
  6. Top with another slice of bread to form a sandwich.
  7. Cut in half and serve.

Notes

  • For a vegan option, omit the feta cheese.
  • Feel free to add other veggies or toppings as desired.
