- 2 medium zucchinis
- 4 slices whole grain bread
- 1/2 cup hummus
- 1 cup spinach
- 1 medium tomato, sliced
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
- Start by slicing the zucchinis into thin rounds.
- In a skillet, heat olive oil over medium heat and sauté the zucchini until tender.
- Spread hummus on each slice of bread.
- Layer spinach, sautéed zucchini, tomato slices, and feta cheese on top of the hummus.
- Season with salt and pepper as desired.
- Top with another slice of bread to form a sandwich.
- Cut in half and serve.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other veggies or toppings as desired.
