- 2 cups chopped broccoli
- 1 cup shredded cheddar cheese
- 1 cup vegetable broth
- 1 cup milk
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 3 tablespoons flour
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, sauté until translucent.
- Stir in the flour to form a roux and cook for 1-2 minutes.
- Add the vegetable broth gradually, stirring continuously until the mixture thickens.
- Add the broccoli and simmer until tender, about 10 minutes.
- Stir in the milk and cheese, cooking until the cheese is melted and smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a thicker soup, blend some of the soup and then return it to the pot.
- Use sharp cheddar for more flavor.
