- 6 eggs
- 1 cup spinach, chopped
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 1/2 cup milk
- 1 cup cheese, shredded
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the eggs and milk. Add salt and pepper.
- Heat olive oil in a skillet over medium heat. Add onions and bell peppers, and sauté until soft.
- Add spinach and cook until wilted.
- Pour the egg mixture into the skillet over the vegetables. Cook for about 5 minutes until it’s set on the edges.
- Sprinkle cheese on top and transfer the skillet to the oven.
- Bake for 15-20 minutes or until the frittata is fully set.
- Remove from the oven and let it cool slightly before slicing.
Notes
- Can be customized with any vegetables you have on hand.
- Great for meal prep and can be stored in the refrigerator for up to 3 days.
