- 500 grams ground lamb or beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- 1 liter chicken broth
- 200 grams diced tomatoes
- 300 grams diced potatoes
- salt and pepper to taste
- 200 grams Greek yogurt for serving
- fresh parsley for garnish
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the ground lamb or beef and cook until browned.
- Stir in the oregano, cumin, and paprika, and cook for an additional 2 minutes.
- Add the chicken broth, diced tomatoes, and diced potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with a dollop of Greek yogurt and garnish with fresh parsley.
Notes
- For added flavor, you can top the soup with crumbled feta cheese.
- This soup can be made a day in advance and tastes even better the next day.
- Adjust the spice level by adding red pepper flakes if desired.
