- 200 grams soybeans
- 1 medium head of cabbage
- 2 tablespoons fermented soybean paste
- 1 liter vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Soak the soybeans overnight and drain.
- Chop the cabbage and set aside.
- In a pot, heat the olive oil and sauté the garlic until fragrant.
- Add the soaked soybeans and vegetable broth to the pot.
- Stir in the fermented soybean paste and soy sauce.
- Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the chopped cabbage and cook for another 10 minutes.
- Season with salt and pepper before serving.
Notes
- For a spicier version, add some chili flakes.
- This soup can be blended for a smoother texture.
