Zaalouk is a traditional Moroccan dip made from eggplants and tomatoes, flavored with spices and olive oil.

Ingredients

  • 2 large eggplants
  • 3 medium tomatoes
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 3 tablespoons olive oil
  • Salt to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the eggplants until the skin is charred and the flesh is soft.
  3. Remove the eggplants and let them cool. Peel off the skin and chop the flesh.
  4. In a pan, heat olive oil and sauté garlic until fragrant.
  5. Add the chopped tomatoes, cumin, paprika, cayenne, and salt. Cook until the tomatoes are soft.
  6. Stir in the eggplant and cook for another 10 minutes.
  7. Garnish with parsley and serve warm or at room temperature.

Notes

  • Can be served with pita bread or as a side dish.
  • Adjust spices according to your taste.
